Breakfast Feasts

Breakfast


Steel Cut Oats with Berries:
1.     Prepared according bag/box/container
2.     Add Fruit
3.     Add sweetener (brown sugar, agave, honey)
4.     Add cream, milk, or almond milk (or not—I often don’t)
(These are amazing because they’ve got protein, way less processed a
nd super low in fat and empty calories—plus they are plain old delicious!!)


Crepes
o   1 C milk
o   1 C all-purpose flour (or whole wheat)
o   2 large eggs
o   6 T water
o   3 T melted butter
o   1/2 t salt
o   Combine all the ingredients and add to the blender and blend
o   Heat flat bottom pan on medium high and use a stick of butter to butter.
o   Pour about ¼ c batter in the pan and then swirl it until the bottom is coated.
o   With a heat-proof spatula, scrape the sides of the pan while cooking.
o   Cook for about 1-2 minutes until it’s not liquid  and then flip for about 15-30 seconds.
o   Removed and fold in quarters.
o   Serve with fruit and yogurt.
o   Makes about 6-8 eight inch.



Whole Wheat Buttermilk Pancake:

Wet:
·      2 eggs whipped
·      1 c buttermilk
·      1 c. milk
·      2 tbsp oil
Dry:
·      1 ¾ c whole wheat flour
·      2 tsp baking soda
·      2 tsp baking powder
·      1 tbsp sugar (optional)

Mix.  Cook on a well-greased griddle (whole wheat sticks more).  They are light and fluffy and delicious!!

Almond and Wheat Waffles:

Wet:
·      4 eggs whipped
·      1 c buttermilk
·      1 c milk
·      ½ c oil (veggie or coconut)
Dry:
·      1 c almond meal
·      1 1/3 c whole wheat flour
·      3 tbsp white flour
·      1 tbsp baking powder
·      ¼ tsp salt
·      1 tbsp sugar

Mix well (very loose batter)—place ½ c or 2/3 c batter onto waffle iron.  They’re a little bit less likely to rise, but they are light and delicious and soo good for you. 


Mueslix

·      1 apple diced
·      1 banana sliced into small pieces
·      A handful of blueberries
·      8 strawberries sliced
·      Canned peaches/pears sliced
·      2 c. plain or vanilla yogurt
·      ¾ c old fashioned oatmeal
·      1 tsp almond extract
·      Brown sugar to taste

Combine all ingredients and stir well.  Taste and add more sugar if needed.  Let sit at least 10 minutes before eating and then feast!!  Delicious.  Not so great after a few hours so make only what you’ll eat for that meal.


Lynsie’s Buttermilk Syrup

Mix in a large saucepan:
1 cup butter
1 cup buttermilk
2 cups sugar
2 Tbs. corn syrup 
Boil 10 minutes stirring constantly reduce heat to low and add:
2 Tbs. vanilla 
1 tsp. baking soda
Add 1/2 c. more buttermilk 
Cook stirring constantly for 2 minutes.

Paula’s Granola

·      5 c oatmeal
·      1 c brown sugar
·      1 c coconut
·      1 c wheat germ

·      ¾ c water
·      ¼ c oil
·      1 tbsp vanilla
·      1 tsp salt
Mix dry together and spread on large cookie sheet.  Mix the wet well.  Pour the wet over top of the dry and mix with your hands.

Cook at 325 for 1 hour stirring every 10-15 minutes.  Add ½ c nuts and ½ dried fruit (or chocolate chips.

Karen’s Granola

·      6 cups rolled oats
·      2 c nuts (any mix will do—whatever you like)
·      2 c shredded coconut
·      1 tsp cinnamon
·      dash salt
·      1 c honey, maple syrup, brown sugar
·      1 c olive oil
·      1 c dried fruit
Preheat oven to 300.  Put oats on a roasting pan or a cookie sheet or a big pot that can go into the oven.  Put on the stove (use two burners if you’re using a cookie sheet) on medium low heat.  Toast for 3-5 minutes, stirring occasionally or until fragrant.

Add nuts and seeds (but not flax—it burns) and do the same for another 2 minutes.

Add coconut and do the same for another 2 minutes

Remove from heat.  Add all the other ingredients (but not dried fruit). 

Put in the oven for 20-30 minutes stirring once or twice.  Remove from heat, let cool, add dried fruit and you’re good!


Bec’s Bran Muffins

·      1 c butter
·      2 c brown sugar
·      2 tbsp molasses
o   Cream together
·      2 ¾ c flour
·      1 ½ c wheat bran
·      2 tsp baking powder
·      ¼ tsp salt
o   Mix in to butter mixture
Mix together
·      2 c buttermilk
·      2 eggs
·      2 tsp baking soda
o   Add to the dry and mix.

Add fruit of your choice (I like it best with fresh cranberries that I’ve blended—usually about a cups worth).

Bake at 375 for 15-20 minutes.

Anne’s Blueberry Muffins

Combine:
·      2 c flour (or 1 c. white, 1 c. whole wheat)
·      1 tbsp baking powder
·      ½ tsp salt
Wisk together:
·      2 eggs
·      1 c. milk
·      2/3 c brown sugar
·      ¼ c veggie oil
·      1 tsp vanilla
Mix together.

Topping:
·      ¼ c butter softened
·      ¼ c sugar
·      1/2 C white flour
o   Cut with pastry cutter until flaky.  Sprinkle over top of muffins.

Cook at 400 for 12-15 minutes.  Let cook 3-4 minutes.  Serve!
